Since ancient time 'Kolhapuri Gul' allure not only the people ofthe country but also in different parts of the world.
The Jaggery industry had flourished from the regime ofChhatrapati Shahu Maharaj and Jaggery became as a branch of theKolhapur. The process of making Jaggery with extracted juice fromsugarcane and mixed withchemical and lime as per need, has became popular method in thisdistrict, which to be fine calcium, iron, vitamin and otheringredients' required to the human body. On this ground whileproducing the Jaggery, paid attention towards it quality, taste andits sweetness.But from last few years this traditional method of making Jaggery,got in difficult now and a practice of infinite use of sugarprevalent in sugarcane juice for raised Jaggery's color and itstaste, which not permanence even this kind of Jaggery's color becameoff-white and hard and raised its weight.While in second method for raising deep-yellow color for Jaggery,farmers mixing extra sulfur and other chemicals including sodiumcarbonate, met nil yellow, ZFS, sodium hydro phosphates, calciumcorbonet and others, which mixing becoming dangerous to the healthand also defaming 'Kolhapur' branch of Jaggery in the market .
